Ingredients:
- 500g ground chicken
- 1/4 cup bread crumbs
- 1/4 cup onion, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup green bell pepper, finely chopped
- 2 cloves garlic, minced
- 1/4 cup cilantro, chopped
- 1 egg, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 6-8 thin slices of ham
- 6-8 slices of cheese
Directions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground chicken, bread crumbs, onion, red and green bell peppers, garlic, cilantro, egg, salt, pepper, and paprika. Mix well until everything is fully incorporated.
- Lay a large sheet of plastic wrap on a flat surface and spread the chicken mixture onto it in a rectangular shape, about 1/2 inch thick.
- Lay the cheese slices on top of the chicken mixture, covering it completely.
- Use the plastic wrap to tightly roll the chicken into a log shape, sealing the ham and cheese inside.
- Place the chicken roll seam-side down on a baking sheet lined with parchment paper.
- Cook for 40–45 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
- Let the chicken roll rest for a few minutes before slicing and serving.
