Recipe:

Ingredients:
1 pound lean ground beef
1 cup split Bengal gram (chana dal), soaked for 2 hours
1 medium onion, roughly chopped
4 cloves garlic
1-inch piece of ginger, peeled
2 green chilies, chopped
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
1 teaspoon salt, or to taste
1/4 cup chopped fresh cilantro
1 egg
2-3 cups water
Vegetable oil for frying
Lemon wedges and sliced onions for garnish

Instructions:

1. In a large pot, combine the soaked Bengal gram and ground beef. Add enough water to cover the meat and gram. Bring it to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the meat and gram are fully tender and the water has evaporated. Set aside to cool.

2. In a food processor, combine the onion, garlic, ginger, and green chilies. Process it until it forms a coarse paste.

3. In a dry skillet, lightly toast the cumin seeds and coriander seeds until fragrant. Grind the toasted seeds into a fine powder using a spice grinder or mortar and pestle.

4. In a spacious mixing bowl, amalgamate the cooked meat and gram mixture. Add onion paste, ground spices, red chili powder, turmeric powder, garam masala, salt, and chopped cilantro. Stir thoroughly, ensuring an even distribution of flavors throughout the mixture.

5. After the mixture has cooled sufficiently, incorporate an egg and knead it thoroughly until a smooth, cohesive dough-like texture forms. If the mixture seems overly wet, you can introduce a tablespoon of chickpea flour to enhance binding.

6. Take a small portion of the mixture and shape it into a round patty, then gently flatten it into a kebab shape.

7.In a frying pan, heat the vegetable oil over medium heat to begin. After the oil reaches the proper temperature, add the kebabs one at a time, being cautious. Fry for about 4–5 minutes on each side, or until they are crispy and golden brown on both sides.

8. Once cooked, transfer the shami kebabs to a plate lined with paper towels to drain off any excess oil.

9. Serve the beef shami kebabs hot with lemon wedges and sliced onions as garnish.
